Cake Ingredients:
- 3-Cups all-purpose flour (coconut flour or rice flour)
- 5 tbsp. Dark Chocolate cocoa powder
- Two teaspoons baking powder
- 2 teaspoons baking soda
- ½ teaspoon kosher salt
- ¼ cup olive oil
- One ripe avocado, mashed
- 2 cups of water
- Two tablespoons white vinegar
- 2 teaspoons vanilla extract
- Two cups sucanat sugar
Frosting ingredients:
- 2 Ripe Avocados, mashed
- 1 cup of sugar
- Five tablespoons dark chocolate cocoa powder
Instructions:
Preheat the oven to 350o, and grease and flour two 9” round cake pans. In a large bowl, whisk the first five ingredients of the cake, and in another one, whisk the olive oil and next four ingredients. Then, pour the second mixture into the flour one, stir well, and divide the batter evenly between the cake pans.
Bake for about 30 minutes, and add a layer of the frosting on the first cake, top with the second layer of the cake, and top the entire cake with the rest of the frosting.
